Bariis Somali Fuduud - How to Make Easy Somali Rice Ingredients 1 tbsp cooking oil 1/4 of an onion 1 tbsp of xawaji (Somali Spice Mix - recipe coming soon) 2 chicken stock cubes 2 cups rice of choice (we used Basmati) 4 cups water Food colorings Instructions Soak 2 cups of rice in water for 20 min Meanwhile boil water in a kettle Place 2 chicken stock cubes in a cup and pour some of the boiling water on it Chop up onions in small pieces Rinse the water out of the rice Take a pot, put stove on medium, then place cooking oil in it When oil is heated, add in chopped onions Once onions are translucent, add in the tbsp of xawaji Add the drained rice into the pot and mix around to lightly toast Add in the one cup of chicken stock cubes mixed in hot water Then add in the additional 3 cups of boiling water from the kettle to just cover the rice completely Rice is ready when the water is finished Once ready, cover the pot with a piece of aluminum foil, and transfer to the oven for 5 to 10 m
