Bariis Somali Fuduud - How to Make Easy Somali Rice
Ingredients
- 1 tbsp cooking oil
- 1/4 of an onion
- 1 tbsp of xawaji (Somali Spice Mix - recipe coming soon)
- 2 chicken stock cubes
- 2 cups rice of choice (we used Basmati)
- 4 cups water
- Food colorings
Instructions
- Soak 2 cups of rice in water for 20 min
- Meanwhile boil water in a kettle
- Place 2 chicken stock cubes in a cup and pour some of the boiling water on it
- Chop up onions in small pieces
- Rinse the water out of the rice
- Take a pot, put stove on medium, then place cooking oil in it
- When oil is heated, add in chopped onions
- Once onions are translucent, add in the tbsp of xawaji
- Add the drained rice into the pot and mix around to lightly toast
- Add in the one cup of chicken stock cubes mixed in hot water
- Then add in the additional 3 cups of boiling water from the kettle to just cover the rice completely
- Rice is ready when the water is finished
- Once ready, cover the pot with a piece of aluminum foil, and transfer to the oven for 5 to 10 min at 350 degrees Fahrenheit
- Remove from oven, then add in the food colorings of your choice.
- Enjoy!
