 Basto iyo Sugo Fuduud oo Macaan - Easy, Delicious Homemade Pasta Sauce


Ingredients for Pasta Sauce (Sugoo)

  • 1 tbsp cooking oil
  • 1/4 chopped onion
  • minced meat
  • 2 tbsp of canned puréed tomatoes
  • 12 to 15 tomatoes
  • salt to taste (we used 1 tbsp)
Ingredients for Pasta:
  • 1 to 2 box(es) of pasta of your choice (we choice fettuccine today, we usually use spaghetti)
  • water (to boil)
  • a little bit of oil
  • 1 tbsp salt


*Heads up, we're cooking for a lot of people. If you want, you can cut the recipe in half to make less*


Instuctions for Pasta Sauce (Sugo)

  • In a blender add in, 12-15 cut tomatoes, 3-4 garlic cloves, ½ cup of water, and blend until it’ s a liquid consistency.
  • In a large pot, heat up 1 tbsp olive oil in MED-HIGH. Then add in ¼ of a chopped onion into the heated oil, cook until it is translucent.
  • Once, the onion is translucent, reduce the heat to MED-LOW, and add in the minced meat. Mix around and cook until all sides are browned. Browning the minced meat should take about 5-10 minutes or so.
  • Once the meat is browned and ready on all sides, add in 2-3 tbsps of pureed tomato to the minced meat and mix around.
  • Then, add in both the blended tomato mixture into the pot and increase the heat to HIGH. It should be coming to a boil. Add salt to taste (we added 1 tbsp). Then reduce heat to MEDIUM for about 40-ish minutes. 
  • In the meantime, slice the green bell pepper into long slices and place into a bowl of water.
  • Once the sauce is ready-ish (when the sauce is reduced), remove the water from the bell peppers, and add them into the sauce for about 5-10 minutes.

Instructions for Pasta
  • Fill a pot half way (or ⅔ of the way) up with tap water and turn heat to HIGH
  • Add a tsp. of olive oil (to prevent pasta from sticking to each other), and add in salt to taste and bring the salt water to a boil
  • Once the salt water comes to a boil, add in the pasta and stir it around (stir the pasta every few minutes or so)
  • Cook pasta to your preference (we cooked it for about 20-ish minutes until it became al-dente)
  • Once pasta is done cooking, drain the water in a strainer
  • Once all the water is removed from the pasta, add a little bit of pasta sauce in the bottom of the pasta pot and return the pasta back into the pot, add in a little more sauce on top of the pasta and mix around

 How to make quick and easy maraq bilash/dalac bilash Ingredients: 1/4 of an onion 4 tomatoes 2 chili peppers 3 potatoes 1 1/2 cup of water 1/2 tsp salt 1/4 of a slice of green pepper 1/4 of a slice of red pepper Instructions: Wash all your produce. Cut the 4 tomatoes, 2 chili peppers, and 3 potatoes into circular shapes. Heat up a few tbsp of oil onto a pan. Sautee some onions until golden brown in the pan. Add in the slice tomatoes and chili peppers into the pan, stir around a little, and cover for about 10 minutes and allow to simmer. Ocassionally, crush the tomatoes with a wooden spoon. Uncover lid and add in 1/2 tsp salt and 1/4 tsp black pepper, stir well. Add in the sliced potatoes, stir well, then add in 1 cup of water, cover and allow to thoroughly cook. Stir occasionally. If the water cuts down and the potatoes are not quite ready yet, add in a little bit of water at a time until potatoes are cooked.
