 Easy Foolproof Grits and Meatless Stew (Soor iyo Maraq) Zijo za Gele na Tusi Hundu



Ingredients:

  • 7 tomatoes
  • 2 chili peppers
  • 2 garlic cloves
  • 1/4 onion
  • 1 to 2 tsp Xawaji/curry powder
  • 1 to 2 tbsp tomato purée
  • 2 halal chicken bouillon
  • 4 potatoes
  • 1 tbsp tamarind
  • 1 cup grits
  • 3 cups of water
  • 1/2 cup of water (set aside for later - see video)

Instructions:

  • In a blender, add in 7 chopped tomatoes, 2 chili peppers, 2 garlic cloves
  • chop up 1/4 of an onion
  • Heat up 1 tbsp of oil on medium heat
  • Then add in 1-2 tsp of xawaji/curry powder and stir
  • Shortly after, add in 1-2 tbsp of tomato puree
  • Then add in the tomato/chili/garlic blended mix into the pot
  • Add in the 2 halal chicken bouillon
  • Turn up heat to high, bring to a boil, then reduce heat to medium
  • In a seperate bowl add in 1 tbsp of tamarind, cover in water, squish/seperate as best as you can and set aside for later
  • Also peel and chop up 4 potatoes into 4 quarters, set in cool water - while waiting to finish cutting -then place the potatoes into the pot
  • Add an additional 1 cup of water into pot, then cook until potatoes are fully cooked (should take about 15-20 minutes)
  • Towards the end of the cooking process, strain in the tamarind water
  • For the grits, bring 3 cups of water to a boil
  • Add in 1 chicken bouillon and 1/4 tsp salt (or to taste)
  • Add in 1 cup of grits into the boiling water and stir immediately 
  • Once it starts boiling and popping, cover with a lid and reduce heat to medium
  • Keep checking and stirring the grits every 3 to 5 minutes
  • Have 1/2 cup of water set aside and ready, and pour little by little into the pot as you mix every few minutes until you get it to cook tot he consistency of your liking 
  • Total time for grits to be fully cooked should be roughly 10 minutes
  • Dress the grits with the meatless stew and enjoy!

How to make quick and easy maraq bilash/dalac bilash

 How to make quick and easy maraq bilash/dalac bilash Ingredients: 1/4 of an onion 4 tomatoes 2 chili peppers 3 potatoes 1 1/2 cup of water 1/2 tsp salt 1/4 of a slice of green pepper 1/4 of a slice of red pepper Instructions: Wash all your produce. Cut the 4 tomatoes, 2 chili peppers, and 3 potatoes into circular shapes. Heat up a few tbsp of oil onto a pan. Sautee some onions until golden brown in the pan. Add in the slice tomatoes and chili peppers into the pan, stir around a little, and cover for about 10 minutes and allow to simmer. Ocassionally, crush the tomatoes with a wooden spoon. Uncover lid and add in 1/2 tsp salt and 1/4 tsp black pepper, stir well. Add in the sliced potatoes, stir well, then add in 1 cup of water, cover and allow to thoroughly cook. Stir occasionally. If the water cuts down and the potatoes are not quite ready yet, add in a little bit of water at a time until potatoes are cooked.
