How to Make Bajiya | Ramadan Food

 How to Make Bajiya | Ramadan Food Ingredients: 1 lb black eyed peas  2 chili peppers  4 garlic cloves  1/4 of an onion  2 tsp salt Instructions: In a food processor, add 1 lb of black eyed peas and coarsely chop them in pulse mode for a few seconds Then place them into a bowl and sift around to remove the extra "dirt" and sandy bits Then cover the bowl in water and allow to sit and soak for 4 to 5 hours 4 to 5 hours later... dump the water and skin floating in the water as well Add new water to the black eyed peas and rub the peas with your hands to remove the skin, continue to repeat the process until clean and none to very little skin left on them Once rinsed out completely and no water is left in the bowl with the black eyed peas, add into it 2 chili peppers, 4 garlic cloves, and 1/4 of an onion to it and blend (We used a hand-held blender, any blender is fine to use) Then add in 2 tsp of salt and mix well and thoroughly with you hands To get the bajiya shape, use your ha

 How To Make Soft Mahamri | Khamdi | Mandazi | Ramadan Food Ingredients: 4 cups flour  1 tbsp yeast  1 tsp cardamom/hilki 1/3 cup sugar  1 cup coconut milk  1/4 cup water Instructions: In a large bowl, mix flour, yeast, cardamom, and sugar together  Then into the same bowl, add in 1 cup of coconut milk and knead by hand or use a mixer/machine Add 1/4 cup water to allow dough to form Have a little bit of extra water and dough on the side in case more is needed to help the dough form Once the dough is formed, keep in bowl and cover with a cloth for 30 minutes and allow to rise Once it has risen, flour your work station and cut the dough into fours Shape each dough into a circular shape Roll it out thinly and evenly, then cut into four triangular shapes and set aside onto a floured platter or a cloth, then cover all of them with a cloth for 15-20 minutes to rise again Once risen, heat up oil on medium heat and fry the khamdi's 2-3 at a time until golden brown on all sides When removin

 How To Make Quick & Tasty Flan | Doolshe Banaadir | Ramadan Food Ingredients: 1/2 cup sugar (to caramelize) 1/2 cup sugar (for mixture) 5 eggs 1/2 cup milk 1 1/4 tsp of ground cardamom  Instructions: Put 1/2 cup of sugar into a pot, place pot on medium heat, allow to caramelize Watch it like hawk, it can burn easily, it should take approximately 5 minutes to caramelize Make sure to swirl occasionally to coat the entire pan and to break clumps Once caramelized, remove the pot from heat and allow to cool In a bowl, add in 1/2 cup sugar, 5 eggs, and 1/2 cup milk and mix well Then add in 1 1/4 tsp of ground cardamom to mixture and mix well Grab a strainer and place on top of caramelized pot Sift the egg mixture into the pot Grab a larger pan and fill half way with water, place the flan pot into the water pan, and then place them into the oven Bake at 350 degrees F for 50-60 minutes When ready, remove the flan pot from the oven and place into the refrigerator for 10-20 minutes to chill
