Ingredients:

  • 4 cups flour
  • 1 tbsp yeast
  • 1 tsp cardamom/hilki
  • 1/3 cup sugar
  • 1 cup coconut milk
  • 1/4 cup water

Instructions:

  • In a large bowl, mix flour, yeast, cardamom, and sugar together
  • Then into the same bowl, add in 1 cup of coconut milk and knead by hand or use a mixer/machine
  • Add 1/4 cup water to allow dough to form
  • Have a little bit of extra water and dough on the side in case more is needed to help the dough form
  • Once the dough is formed, keep in bowl and cover with a cloth for 30 minutes and allow to rise
  • Once it has risen, flour your work station and cut the dough into fours
  • Shape each dough into a circular shape
  • Roll it out thinly and evenly, then cut into four triangular shapes and set aside onto a floured platter or a cloth, then cover all of them with a cloth for 15-20 minutes to rise again
  • Once risen, heat up oil on medium heat and fry the khamdi's 2-3 at a time until golden brown on all sides
  • When removing from oil, make sure to drain as much of the oil as possible before transferring to paper towel covered plate
  • Enjoy!
