How To Make Soft Mahamri | Khamdi | Mandazi | Ramadan Food
Ingredients:
- 4 cups flour
- 1 tbsp yeast
- 1 tsp cardamom/hilki
- 1/3 cup sugar
- 1 cup coconut milk
- 1/4 cup water
Instructions:
- In a large bowl, mix flour, yeast, cardamom, and sugar together
- Then into the same bowl, add in 1 cup of coconut milk and knead by hand or use a mixer/machine
- Add 1/4 cup water to allow dough to form
- Have a little bit of extra water and dough on the side in case more is needed to help the dough form
- Once the dough is formed, keep in bowl and cover with a cloth for 30 minutes and allow to rise
- Once it has risen, flour your work station and cut the dough into fours
- Shape each dough into a circular shape
- Roll it out thinly and evenly, then cut into four triangular shapes and set aside onto a floured platter or a cloth, then cover all of them with a cloth for 15-20 minutes to rise again
- Once risen, heat up oil on medium heat and fry the khamdi's 2-3 at a time until golden brown on all sides
- When removing from oil, make sure to drain as much of the oil as possible before transferring to paper towel covered plate
