 Cook Iftar With Me: Chicken Enchiladas (Quick & Easy Recipe)

Ingredients:

  • 2 chicken breasts 
  • 1 tsp salt 
  • 1 tsp black pepper 
  • 1 tsp garlic powder 
  • 1 tsp red chili powder 
  • store bought enchilada sauce 
  • 1 tsp salt 
  • 1 tsp black pepper 
  • 1 tsp garlic powder 
  • 1 tsp red chili powder 
  • corn flour tortillas (you can fry them in oil if you like before dipping in enchilada sauce) 
  • cheese (any, we used cheddar cheese and monterey jack)

Instructions:

  • Fill pot with water
  • Add two chicken breasts tot he water and bring to a boil
  • To the pot, add in 1 tsp each of salt, black pepper, garlic powder, red chili powder
  • Boil chicken for 20 minutes
  • Remove chicken from pot once fully cooked and shred immediately
  • 2 options for shredding: Use a fork or use a handheld mixer to shred chicken
  • Add some store bought enchilada sauce into a sauce pan and bring to a simmer
  • Then add in 1 tsp of each of salt, black pepper, garlic powder, red chili powder and give it a good mix
  • Pour some of the enchiladas sauce on the bottom of the baking pan to coat lightly
  • Grab a tortilla (You can fry it in some oil for a few seconds), and coat it with the enchilada sauce 
  • Then add some chicken and cheese (use whatever you like, we used cheddar cheese and monterey jack) to the torilla and roll it up ... continue process until you're all done
  • Then pour some enchilada sauce on top of all the rolled enchiladas and add cheese on top before placing into oven
  • Bake at 350 degrees F for 20 minutes
  • Enjoy!

How to make quick and easy maraq bilash/dalac bilash

 How to make quick and easy maraq bilash/dalac bilash Ingredients: 1/4 of an onion 4 tomatoes 2 chili peppers 3 potatoes 1 1/2 cup of water 1/2 tsp salt 1/4 of a slice of green pepper 1/4 of a slice of red pepper Instructions: Wash all your produce. Cut the 4 tomatoes, 2 chili peppers, and 3 potatoes into circular shapes. Heat up a few tbsp of oil onto a pan. Sautee some onions until golden brown in the pan. Add in the slice tomatoes and chili peppers into the pan, stir around a little, and cover for about 10 minutes and allow to simmer. Ocassionally, crush the tomatoes with a wooden spoon. Uncover lid and add in 1/2 tsp salt and 1/4 tsp black pepper, stir well. Add in the sliced potatoes, stir well, then add in 1 cup of water, cover and allow to thoroughly cook. Stir occasionally. If the water cuts down and the potatoes are not quite ready yet, add in a little bit of water at a time until potatoes are cooked.
