 How to make mboga (traditional spinach dish)


Ingredients:

  • 4 tomatoes 
  • 1 green chili pepper
  • 1/2 an onion 
  • 1 tbsp curry powder 
  • 1 tsp chili powder/masala 
  • 1 tsp black pepper 
  • 1 tsp turmeric  
  • 1 tbsp purée tomato 
  • 1/2 cu of corn
  • 1/2 cup of dice carrots
  • 1/2 tsp salt 
  • 1/4 cup instant mashed potatoes 
  • 1 tbsp vinegar


Instructions:

  • Cut 4 tomatoes into halves or fourths, and cut a green chili pepper in half and place into a blender and blend
  • In a pan, heat up a few tbsp of oil
  • Finely chop up 1/2 an onion and place into pan with heated oil until golden brown
  • Then add in 3 minced garlic cloves and stir
  • Add 1 tbsp of curry powder and stir
  • Add 1 tsp masala, 1 tsp black pepper, 1 tsp turmeric and stir
  • Add 1 tbsp of pureed tomato and mix it well, then pour in the blended tomatoes/chili blend LITTLE BY LITTLE into the pan and stir
  • Wash your spinach (10 oz or more), then place it into a pot of water, bring to a boil and allow to boil for 4 to 5 minutes, then drain and add cooked spinach into the tomato pan and stir to break up chunks of spinach
  • Add in 1/2 cup of corn, 1/2 cup of carrots and stir 
  • Add in 1/2 tsp salt ans tire
  • Add in 1/4 cup of instant mashed potatoes and stir
  • Add in 1/2 tsp vinegar and stir 
  • Enjoy with bread of manda!

 anchari (traditional barawa hot sauce recipe) Ingredients: 10 tomatoes  1 onion   5 garlic cloves  20 chili peppers  1 tsp red chili pepper   1 tsp black pepper  a few tbsp oil for cooking  1/4 of an onion  1 tbsp curry powder   2 tbsp purée tomatoes  tamarind (and water to soak it in)  1 cup mango  1 tsp salt Instructions: Chop up 10 tomatoes and blend it in a blender Pour blended tomatoes in a separate bowl and set it aside for now In a blender, add in 1 whole onion, 5 garlic cloves, and 20 chili peppers, 1 tsp of red chili pepper, and 1 tsp black pepper, and blend and set aside for now In a pot, heat up a few tbsp of oil Finely chop up 1/4 of an onion and add it into the pot with heated oil, stir, and cook until golden brown Add in 1 tbsp of curry and continue stirring Then add in 2 tbsp of tomato puree and continue to stir Then add in the blended chili pepper, garlic, and onion mixture Give it a stir and let it boil for a few minutes, BE CAREFUL DON'T BURN YOURSELF Then add in
