Ingredients for pancake batter:

  • 1 1/3 cup flour
  • 2 tbsp sugar
  • 3 tsp baking powder
  • 3 tbsp oil
  • 1 large egg
  • 3/4 tsp salt
  • 1 1/4 cup milk


Ingredients for cinnamon filling:

  • 1/4 cup butter
  • 1/4 cup brown sugar or a little more
  • 1/2 tbsp cinnamon


Ingredients for cream cheese glaze:

  • 1/4 cup butter
  • 4 tbsp cream cheese 
  • 3/4 cup powdered sugar
  • a dash of vanilla
  • 1/2 tsp maple syrup


Instructions:

  • Part 1: Pancake batter
    • Add the dry ingredients together in a bowl: add 1 1/3 cup of flour, 2 tbsp sugar, 3 tsp baking powder, 3/4 tsp salt and mix it all up
    • To the same bowl, add in 1 egg, 1 1/4 cup milk, and 3 tbsp oil and mix well to incorporate and set aside for now
  • Part 2: Cinnamon filling
    • In a separate bowl, add in 1/4 cup of melted butter, 1/4 cup and 2 tbsp of brown sugar, 1/2 tsp of cinnamon and mix well
    • Place cinnamon filling into a ziplock bag and place into the freezer for 20 minutes to thicken
    • *KEEP IN FREEZER WHEN NOT IN USE TO KEEP THICK CONSISTENCY*
  • Part 3: Cream cheese glaze
    • Add 1/4 cup of room temp butter into a small bowl and heat up for 10 seconds
    • To the same bowl, add in 4 tbsp of cream cheese and mix well with a spoon until soft and creamy
    • Add 3/4 of powdered sugar and mix
    • Add 1/2 tsp of maple syrup and a dash of vanilla and mix
  • Part 4: Cook and enjoy
    • Heat up a tsp of butter and add 1/4 cup of pancake batter to skillet to cook
    • Swirl on the cinnamon filling before the pancakes firms up
    • Then flip to cook the other side
    • When off the skillet, add a swirl on cinnamon filling while the pancake is hot
    • Continue process until complete
    • Stack pancakes and add cream cheese glaze on top and enjoy!

 Somali Chicken Stew (Maraq Digag) Ingredients: 1 lb of chicken 1 tsp masala powder 3 grated garlic cloves 1 tsp xawaji 1 tsp chicken tandoori 1 tsp black pepper 1 tsp all purpose seasoning 1 cup buttermilk 1/4 of an onion 2 cups water 1 tbsp flour 1/2 cup coconut milk some slices of bell pepper Instructions: Cut 1 lb of chicken into cubes Place chicken in a bowl Put all the spices on top 1 tsp each: masala powder, garlic cloves, xawaji, chicken tandoori, black pepper, all purpose seasoning, and 1 cup buttermilk Once you've given it a good mix and incorporated all the ingredients, let it marinate for at least 30 minutes Heat up some oil in a pot and saute 1/4 of an onion until transluscent Put the chicken marinade into the pot and stir for a few minutes Then add 2 cups of water, cover pot, and allow to cook on medium heat for 20-25 minutes Then in a cup or bowl, add in 1 tbsp of flour and 1/2 cup of coconut oil, mix and place into chicken stew Towards the end of the cooking process...
